Shrimp Or Chicken Lo Mein

Ingredients

  • 1/2 pound whole wheat or possibly reg. spaghetti, cooked and well rinsed
  • 2 tbsp. oil
  • 6 scallions, bias-sliced
  • 1 clove garlic, chopped
  • 1/2 teaspoon ginger (if you have it)
  • 1 pound shrimp or possibly chicken breast, sliced thin
  • 1 c. sliced mushrooms
  • 1 sm. head bok choy or possibly napa cabbage, sliced

Directions

  1. Combine: 1 tbsp. soy 1/2 teaspoon sugar
  2. Cook spaghetti; drain. Rinse well with cool water.
  3. In wok, saute/fry scallions, ginger, garlic for 1 or possibly 2 min.
  4. Add in bok choy. Saute/fry 2 or possibly 3 min.
  5. Add in mushrooms. Remove all of the above and set aside.
  6. Saute/fry shrimp or possibly chicken till done (3 min).
  7. Add in vegetables and spaghetti. Heat through and add in sauce ingredients which have already been combined.
  8. Heat through and serve.
