Ingredients
- 1/2 c. Extra virgin olive oil
- 2 x Garlic cloves
- 1 sm onion
- 1 x Green pepper
- 1 lb Raw shrimp,peeled & deveined
- 3/4 c. Tomatoes
- 1 pch Saffron
- 1 Tbsp. Salt
- 1/2 tsp Yellow food coloring
- 2 c. Water
- 1 c. Rice
- 1/2 c. Green peas, tiny
- 1 can Pimentos, small jar
- 1 x Parsley
Directions
- Heat extra virgin olive oil and saute/fry the minced garlic, onion, and green pepper.
- When half done, add in the shrimp. When shrimp turn pink, add in the tomatoes, saffron, salt, coloring and water. When mix starts boiling, add in 1 c. rice. Bake in oven at 350 deg. for 15 min. Garnish with peas, pimiento and parsley leaves.
