,%20I%20was%20craving%20comfort%20food,%20and%20for%20me,%20that%20means%20pasta,%20in%20particular%20creamy%20pasta%20(think%20my%20mom's%20macaroni%20and%20cheese%20-%20delicious%20and%20satisfying%20but%20laden%20with%20fat%20and%20calories).%20I%20was%20thinking%20of%20making%20fettuccine%20alfredo.%20Now%20you%20may%20be%20asking%20yourself,%20%22What%20is%20light%20about%20fettuccine%20alfredo?%22%20Well,%20that's%20the%20challenge.%20I%20made%20some%20minor%20changes%20to%20my%20usual%20recipe%20by%20removing%20butter%20and%20oil,%20using%20Simply%20Smart%20fat%20free%20milk%20(which%20Chris%20and%20I%20like%20more%20than%20usual%20skim),%20and%20using%20spinach%20fettuccine%20instead%20of%20regular%20pasta%20for%20a%20vegetable%20boost.%20Both%20of%20us%20were%20pleasantly%20surprised%20at%20the%20excellent%20flavor,%20so%20much%20that%20this%20new%20way%20of%20making%20alfredo%20may%20become%20our%20usual%20way.%20Isn't%20that%20the%20point?%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ENote:%20This%20recipe%20made%20enough%20for%20two%20dinners%20and%20lunch-sized%20leftovers%20for%20one.%3C/p%3E%3Cp%3EPrepare%20the%20pasta%20according%20to%20package%20directions.%20In%20a%20medium-sized%20sauce%20pan,%20cook%20the%20bacon%20and%20remove%20it,%20leaving%20the%20drippings%20in%20the%20pan%20on%20medium-high%20heat.%20Add%20the%20shrimp%20and%20garlic%20to%20the%20pan%20and%20cook%20until%20the%20shrimp%20is%20pink,%202-3%20minutes.%20Take%20the%20shrimp%20and%20garlic%20out%20and%20set%20aside%20in%20a%20small%20bowl.%20Add%20the%20flour%20to%20the%20pan%20and%20season%20it%20with%20the%20salt%20and%20pepper.%20Stir%20it%20over%20the%20heat%20for%2030%20seconds,%20then%20slowly%20whisk%20in%20the%20milk.%20Put%20in%20the%20pinch%20of%20nutmeg%20and%20cook%20the%20milk%20about%20four%20minutes,%20stirring%20often,%20until%20it%20thickens.%20Remove%20from%20heat%20and%20stir%20in%20the%20parmesan%20cheese.%20To%20serve,%20toss%20the%20pasta,%20shrimp%20and%20milk%20mixture%20together%20with%20the%20bacon%20crumbled%20on%20top.%3C/p%3E){kind=link}
