Ingredients
- 2 tbsp. extra virgin olive oil
- 1 clove garlic, finely minced
- 1 med. onion, sliced
- 2 med. zucchini, thinly sliced
- 1/2 c. diced fresh tomato
- 1/4 teaspoon dry oregano, rubbed
- Salt and freshly grnd pepper, to taste
- Parmesan cheese, if you like
Directions
- Heat extra virgin olive oil in a medium skillet. Saute/fry garlic and onion for 1 minute. Add in zucchini is still hard, add in tomatoes and oregano. Cover and cook 5 min longer till zucchini is just tender. Season to taste with salt and pepper. Serve sprinkled with Parmesan cheese. Serves 4.
