Roasted Sweet Potato Fries Recipe

Ingredients

  • 2 Tbsp. extra virgin olive oil
  •     Coarse salt to taste
  •     Coarsely-grnd black pepper to taste
  • 2 Tbsp. unsalted butter melted
  • 1 1/2 lb sweet potatoes scrubbed, unpeeled,
  •     and cut into fries

Directions

  1. Preheat oven to 450 degrees.
  2. In a small bowl, whisk together the oil, the butter, and salt and pepper, to taste.
  3. Arrange the potato slices, not touching, in rows on an oiled baking sheet. Brush the potatoes with the oil mix, and roast them in the upper 1/3 of a preheated 450 degree oven, turning them once with a spatula, for 18 to 22 min, or possibly till they are golden brown and crisp.
  4. Transfer the potatoes to paper towels to drain, sprinkle them with the coarse salt and pepper to taste, and serve them hot.
  5. This recipe yields 4 servings.
