Roasted Sweet Potato And Red Onion Recipe

Ingredients

  • 1 x very large yam, (or possibly 2 smaller)
  • 1 x red onion, coarsely, minced
  • 1 Tbsp. brown sugar
  • 1 tsp minced garlic
  • 3 Tbsp. butter
  • 1 pch salt
  • 1 pch pepper
  • 2 Tbsp. minced fresh tarragon
  •     large sheet aluminum foil

Directions

  1. Cut the yam(s) in half lengthways, then slice perpendicular into 1/2 inch thick slices.
  2. Add in onion.
  3. Transfer to aluminum foil sheet (shiny side down) and add in brown sugar, salt & pepper, garlic, butter and tarragon.
  4. Carefully fold foil over to create a sealed pouch or possibly envelope around the ingredients, rolling all edges tightly to prevent leakage of butter when it melts.
  5. Place on grill at medium high heat for approximately twenty min, flipping once during which time.
