Ingredients
- 1 x very large yam, (or possibly 2 smaller)
- 1 x red onion, coarsely, minced
- 1 Tbsp. brown sugar
- 1 tsp minced garlic
- 3 Tbsp. butter
- 1 pch salt
- 1 pch pepper
- 2 Tbsp. minced fresh tarragon
- Â Â large sheet aluminum foil
Directions
- Cut the yam(s) in half lengthways, then slice perpendicular into 1/2 inch thick slices.
- Add in onion.
- Transfer to aluminum foil sheet (shiny side down) and add in brown sugar, salt & pepper, garlic, butter and tarragon.
- Carefully fold foil over to create a sealed pouch or possibly envelope around the ingredients, rolling all edges tightly to prevent leakage of butter when it melts.
- Place on grill at medium high heat for approximately twenty min, flipping once during which time.
