  • 12 x Red bliss potatoes
  • Melted butter
  • Salt to taste
  • Freshly-grnd black pepper to taste
  • Dilled cream cheese with smoked salmon
  • Lowfat sour cream, caviar and chives
  • Roasted red pepper pesto

Directions

  1. Preheat oven to 375 degrees.
  2. Halve potatoes, brush with butter and season with salt and pepper. Arrange potatoes on greased baking sheet and bake till just tender.
  3. With melon ball cutter scoop out centers of potatoes, leaving a 1/4-inch shell, brush with butter and arrange on baking sheet cut side up. Continue to roast till crisp.
  4. Fill and serve.
