  1. Preheat the oven to 400 degrees. Wrap the beets in a large piece of foil and bake till tender, about 90 min. Remove the foil and let the beets cold. Hold the beets under cool running water so the skins will slip off. Cut the beets into wedges. Combine the beets with the extra virgin olive oil, orange juice, vinegar, salt and pepper in a bowl.
  2. Arrange the greens on each of 4 salad plates; top with the beets. Sprinkle with cheese, chives and almonds. Serve with orange segments.
