Ingredients
- 4 x roma tomato
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. chopped garlic
- 1/4 c. minced dill
- 1 pch salt and pepper
- 2 c. yellow beans, trimmed
Directions
- Place tomatoes in a large pot of boiling water for 15 seconds. Remove with slotted spoon and plunge immediately into bowl full of ice water for 1 minute. Drain well and slip off skins, cut into quarters, and remove seeds. (the skinless, seeded, quartered tomato pcs are called fillets.)
- In a medium bowl whisk together oil, vinegar, garlic, dill, salt and pepper. Drizzle over beans and tomato fillets. Cover and chill for 1 hour.
- Preheat grill to medium and lightly oil grill rack. Grill beans and tomatoes for 5 min or possibly till beans are crisp tender and tomatoes are soft and slightly charred.
