Directions

  1. Preheat Oven 325 degrees:
  2. In a food processor combine the cloves of garlic, smoked paprika, ground cumin, hot curry, brown sugar, and salt and apple cider vinegar.
  3. Process this mixture into a paste.
  4. Rub this mixture under the pork skin and in all of the creases.
  5. Place pork on a cooking rack in a baking pan.
  6. Place the chicken broth in the baking pan. Refill the pan with water as the broth dries up.
  7. Cook uncovered for the first half hour. Then place an aluminum foil tent over the pork.
  8. Cook roast for 35 – 40 minutes per pound at 325 degrees.
