Ingredients
- 500 gm Ricotta cheese
- 1 lrg Lemon, juice and grated rind
- 8 slc chilled watermelon
- Â Â Salt
- Â Â Fresh grnd black pepper
- Â Â Watermelon seeds
- Â Â Lemon wedges
Directions
- Combine cheese, lemon rind, juice, salt and pepper in a bowl. Mix well using a fork. Remove some of the seeds from the watermelon and roast in moderate oven 180 C for 7-8 min. Allow to cold. Arrange watermelon slices on plates and add in ricotta cheese mix. Sprinkle roasted seeds over cheese and garnish with lemon wedges.
