Green beans and red potatoes are a staple in Southern cuisine and one dish I particularly love! This is the easiest side dish to make and it is definitely one you can make a personal statement with. It tastes so fresh and wonderful everyone will think you have slaved away all day preparing it. Sshhh. . . . keep the secret to yourself about how easy and quick it really is!
Ingredients
- 2 pounds small red potatoes, washed and drained
- 1 1/2 pounds fresh green beans, rinsed with ends cut off, drained
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- salt and pepper to taste
Directions
- Bring a large kettle of water and the 1 teaspoon of salt to a boil. Drop in the potatoes and boil for 15 minutes. Drop in the green beans and boil for 5 minutes. Remove from heat and drain the beans/potatoes. Place olive oil and garlic in a skillet over medium heat. Saute for 30 seconds. Add the potatoes and green beans, stir well to coat with the oil and garlic. Cook for approximately 3-4 minutes until it is all heated through. Remove from heat. Sprinkle with salt and pepper to taste.
