%20or%20any%20other%20so%20called%20difficult%20method,%20you%20may%20see%20when%20you%20google%20for%20%22puff%20pastry%22%3C/p%3E%3Cp%3EEasy%20puff%20pastry%20can%20be%20made%20with%20the%20most%20basic%20ingredients%20and%20in%20under%2015%20minutes.%3C/p%3E%3Cp%3EBack%20in%20the%2080's%20amma%20started%20making%20puffs%20at%20home;%20which%20my%20two%20brothers%20and%20myself%20used%20to%20enjoy%20a%20lot.%20She%20mostly%20used%20to%20make%20this%20for%20special%20occasions;%20like%20when%20a%20friend%20dropped%20in%20or%20when%20we%20long%20for%20something%20bakery%20style.%3C/p%3E%3Cp%3EFast-forward%20to%202014;%20my%20daughter,%20Nidhi%20loves%20puffs%20and%20I%20have%20been%20asking%20amma%20to%20teach%20me%20how%20to%20make%20and%20somehow%20things%20did%20not%20work%20out%20when%20I%20last%20visited%20her.%20Right%20now%20she%20is%20visiting%20us%20here%20in%20Calicut%20and%20I%20coaxed%20and%20buttered%20her%20to%20show%20me%20how%20to%20make%20puffs.%3C/p%3E%3Cp%3EThe%20first%20time%20she%20taught%20me,%20I%20did%20not%20take%20any%20pictures%20and%20so,%20I%20buttered%20her%20to%20make%20again%20the%20next%20day%3C/p%3E%3Cp%3ECan%20you%20see%20the%20layers%20in%20the%20picture;%20yes%20this%20is%20homemade%20puffs!%20and%20now%20you%20can%20make%20it%20at%20home%20like%20a%20pro!%3C/p%3E%3Cp%3EStep%20by%20Step%20Method:%3C/p%3E%3Cp%3EYields:%208%3C/p%3E%3Cp%3ENote:%20I%20could%20not%20use%20cups%20in%20this%20recipe%20for%20measurement;%20the%20main%20ingredients%20are%20in%20weights.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20180%20degree%20C.%3C/p%3E%3Cp%3EDunk%20flour%20in%20a%20bowl%20and%20add%2050%20gms%20of%20shortening%20(I%20used%20dalda),%20mix%20with%20fingertip%20till%20it%20resembles%20coarse%20breadcrumbs%20OR%20you%20can%20pulse%20in%20a%20food%20processor.%3C/p%3E%3Cp%3EAdd%20water%20little%20by%20little%20and%20mix%20it%20into%20a%20smooth%20dough.%20I%20did%20knead%20the%20dough%202-3%20minutes%20on%20the%20counter.%3C/p%3E%3Cp%3EI%20like%20to%20use%20my%20baking%20mat%20(its%20a%20life%20saver)%20as%20it%20does%20not%20stick%20and%20its%20easy%20to%20roll.%3C/p%3E%3Cp%3EPlop%20the%20dough%20on%20the%20mat%20and%20dust%20a%20little%20flour%20on%20top.%20Spread%20it%20out%20in%20rectangle%20with%20a%20rolling%20pin%20(8x16).%3C/p%3E%3Cp%3EPut%20the%2075%20gms%20of%20shortening%20in%20a%20bowl%20and%20soften%20with%20a%20spoon,%20so%20that%20there%20may%20not%20be%20any%20lumps.%20Roughly%20divide%20into%20three%20portions.%20Spoon%20one%20portion%20into%20the%20rolled%20dough.%3C/p%3E%3Cp%3ESpread%20the%20shortening%20on%203/4%20of%20the%20rolled%20dough.%20Fold%20the%20dough%20towards%20you%20half%20way.%20And%20fold%20the%20end%20near%20you%20over%20it.%3C/p%3E%3Cp%3EAgain%20gently%20without%20giving%20much%20pressure,%20roll%20the%20dough%20into%20a%20rectangle.%20You%20should%20be%20careful%20not%20to%20thin%20the%20dough%20too%20much;%20about%201/4%20inch%20thickness%20should%20be%20there.%3C/p%3E%3Cp%3EAgain,%20spoon%202nd%20portion%20of%20the%20shortening%20and%20spread%203/4%20of%20the%20rolled%20dough.%20Fold%20from%20the%20fartherest%20end%20(that's%20amma%20making%20gently%20while%20I%20was%20clicking%20for%20you;%20you%20should%20see%20the%20way%20she%20handles%20the%20dough,%20so%20gently!).%3C/p%3E%3Cp%3EAnd%20again%20fold%20the%20end%20near%20you.%20Now%20repeat%20the%20same%20process%20with%20the%20remaining%20shortening.%20That%20is%20a%20total%20of%20three%20times%20of%20rolling%20and%20spreading%20the%20shortening.%20Your%20puff%20pastry%20is%20ready.%3C/p%3E%3Cp%3ERoll%20out%20one%20last%20time%20and%20cut%20into%20your%20desired%20shapes;%20it%20is%20important%20to%20put%20the%20filling%20on%20one%20half%20of%20the%20square%20pastry%20and%20gently%20pull%20the%20dough%20over%20it.%20Do%20not%20press%20or%20flatten%20the%20dough.%20Bake%20immediately%20for%2050%20minutes%20after%20giving%20an%20egg%20wash.%3C/p%3E%3Cp%3EPuff%20Pastry%20Recipe%20-%20Homemade%20Puff%20Pastry%3C/p%3E%3Cp%3EPREP%20TIME:%3C/p%3E%3Cp%3E15%20mins%20%20%20%20%7C%3C/p%3E%3Cp%3ECOOK%20TIME:%3C/p%3E%3Cp%3E50%20mins%20%20%20%20%7C%3C/p%3E%3Cp%3EAUTHOR::%3C/p%3E%3Cp%3ENISA%20HOMEY%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EWater:%20About%20half%20cup%20or%20accordingly.%3C/p%3E%3Cp%3EExtra%20flour%20for%20dusting.%3C/p%3E%3Cp%3EMETHOD:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20180%20degree%20C.%20Add%20flour%20into%20a%20large%20bowl.%20Add%20salt%20and%2050%20gms%20of%20shortening.%20Rub%20the%20shortening%20into%20the%20flour%20with%20your%20fingertips%20(or%20pulse%20in%20a%20food%20processor)%20till%20it%20resembles%20coarse%20breadcrumbs.%3C/p%3E%3Cp%3EMake%20a%20well%20in%20the%20flour,%20add%20water%20slowly%20and%20knead%20into%20a%20soft%20dough.%3C/p%3E%3Cp%3EPut%20the%2075%20gm%20of%20shortening%20in%20a%20small%20bowl%20and%20soften%20it%20nicely%20without%20any%20lumps.%20Then,%20divide%20into%20three.%3C/p%3E%3Cp%3EPlace%20the%20dough%20on%20a%20baking%20mat%20or%20on%20the%20counter;%20du
