Ingredients
- 2Â 1/2 lb Porterhouse steak (1 steak)
- Â Â Grilled scallions
- Â Â Cast Iron Potato Salad see * Note
- 6 Tbsp. Hoisin sauce
- 2 Tbsp. Rice wine vinegar
- 2 Tbsp. Soy sauce
- 2 Tbsp. Unsalted butter
- 1/2 med Red onion finely diced
- 1 x Garlic clove chopped
- 6 x Plum tomatoes coarsely diced
- 1/4 c. Ketchup
- 2 Tbsp. Dijon mustard
- 2 Tbsp. Dark brown sugar
- 1 Tbsp. Honey
- 1 tsp Cayenne
- 1 Tbsp. Ancho chile pwdr
- 1 tsp Pasilla chile pwdr
- 1 Tbsp. Worcestershire sauce
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Directions
- Season the steak with salt and pepper. Combine all sauce ingredients.
- Grill the porterhouse for 5 min on each side while basting with the sauce. Serve with grilled scallions and Cast Iron Potato Salad.
