Ingredients

  • 2 x Large eggs
  • 1 1/2 c. all-purpose flour
  • 3/4 c. white sugar
  • 1/2 tsp salt
  • 1/2 c. vegetable oil
  • 1 tsp grnd cinnamon
  • 1 c. persimmon pulp
  • 1/2 c. minced walnuts
  • 1 tsp baking soda
  • 1/2 c. raisins

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Oil a 9 x 4 inch pan. 2 In a small bowl, combine flour, cinnamon, salt, nuts, and raisins. In a large bowl, blend Large eggs, sugar, and oil. Mix baking soda into pulp, and add in to sugar mix.
  2. Mix in flour mix. Pour batter into prepared pan. Bake for 75 min, or possibly till tester inserted in the center comes out clean.
  3. Makes 1 loaf
