Ingredients
- 1 lb boneless pork shoulder, cut into 2-3 large pieces
- 1/2 onion, chopped
- 1 large onion, chopped
- 1 sweet bell pepper, chopped
- 1 large or 2 small zucchini, halves and then sliced into half-moons
- 1 1/2 T dried ancho pepper
- 2 t dried New Mexico Chile Pepper
- 1 t, to taste dried chipotle pepper
- salt and pepper, to taste
- 1 T ground cumin
- 2 t Mexican oregano
- 1 12 oz bottle Mexican lager beer
- 4-6 cloves garlic, minced
- approx. 16 oz fresh or canned pineapple--reserve all juice if fresh, some juice if canned
- 1/4 - 1/2 cup bacon grease or lard (I keep bacon grease in my freezer)

,%20under%202%20hours%20does%20not%20produce,%20to%20my%20mind,%20a%20truly%20falling%20apart%20tender%20hunk%20of%20meat.%20Or%20more%20to%20the%20point,%20it%20does%20produce%20a%20true%20hunk%20of%20meat,%20one%20that%20can%20still%20be%20sliced,%20which%20is%20not%20really%20my%20definition%20of%20%E2%80%9Cfalling%20apart.%E2%80%9D%3C/p%3E%3Cp%3EI%20digress.%3C/p%3E%3Cp%3EThe%20point%20being%20I%20just%20was%20not%20sure%20how%20much%20I%20was%20going%20to%20like%20pork%20shoulder%20that%20was%20simmered%20in%20water%20and%20then%20chopped,%20fried,%20and%20simmered%20briskly.%3C/p%3E%3Cp%3EIt%20was%20genius.%20The%20pork%20was%20completely%20tender%20and%20so%20deliciously,%20well,%20pork-y.%20I%20immediately%20started%20plotting%20other%20ways%20that%20I%20could%20use%20the%20same%20cooking%20method%20but%20with%20other%20flavors.%3C/p%3E%3Cp%3EThe%20chopped%20pork,%20after%20simmering.%3C/p%3E%3Cp%3EThe%20original%20intention%20was%20to%20wait%20a%20while,%20but%20John%20and%20I%20had%20a%20misunderstanding%20and%20instead%20of%20placing%20the%20still%20frozen%20other%20half%20of%20the%20pork%20shoulder%20back%20in%20the%20freezer,%20he%20placed%20it%20in%20the%20fridge%20where%20it%20thawed%20completely.%20Yikes.%20So%20now%20I%20needed%20a%20pork%20shoulder%20recipe%20and%20fast.%3C/p%3E%3Cp%3EI%20decided%20to%20use%20the%20same%20cooking%20method%20but%20with%20Mexican%20flavors.%20I%20used%20dried%20Mexican%20chile%20peppers,%20dried%20Scarlet%20Runner%20beans%20from%20Rancho%20Gordo%20and%20added%20bell%20pepper%20and%20zucchini%20to%20the%20mix.%20Then,%20I%20was%20in%20the%20process%20of%20transferring%20the%20dish%20to%20the%20casserole%20when%20suddenly%20I%20realized%20the%20dish%20smelled%20so%20much%20like%20tacos%20al%20pastor%20that%20it%20simply%20had%20to%20have%20pineapple.%20To%20have%20not%20had%20pineapple%20in%20this%20dish%20I%20think%20would%20have%20caused%20the%20dish%20to%20be%20brutally%20disappointing,%20it%20smelled%20so%20much%20tacos%20al%20pastor.%20Luckily%20I%20had%20canned%20pineapple%E2%80%94one%20of%20the%20few%20canned%20fruits%20or%20veggies%20I%20keep%20around%E2%80%94and%20in%20went%20the%20pineapples%20with%20some%20of%20the%20juice.%20And%20it%20was%20perfect.%20We%20ate%20this%20one%20without%20rice%20and%20I%20loved%20every%20single%20slurp.%3C/p%3E%3Cp%3EScooping%20out%20frozen%20bacon%20grease.%3C/p%3E%3Cp%3EPastor%20Flavored%20Pork%20&%20Beans%20(Method%20adapted%20from%20Paua%20Wolfert;%20recipe%20itself%20by%20The%20Spiced%20Life)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2%20cups%20dried%20beans%20of%20choice,%20I%20used%20scarlet%20runners%20from%20Rancho%20Gordo%3C/p%3E%3Cp%3E2%20bay%20leaves%3C/p%3E%3Cp%3ECooking%20Directions%3C/p%3E%3Cp%3ESoak%20the%20beans%20overnight%20in%20cold%20water.%20Although%20I%20am%20not%20normally%20a%20huge%20fan%20of%20soaking%20(especially%20because%20I%20use%20super%20fresh%20beans%20from%20places%20like%20Rancho%20Gordo),%20I%20think%20it%20is%20important%20in%20this%20dish%20as%20you%20will%20not%20be%20just%20straight%20cooking%20the%20beans%20like%20normal.%3C/p%3E%3Cp%3EThe%20next%20day,%20place%20the%20beans%20in%20a%20large%20pot%20with%20their%20water--add%20enough%20additional%20water%20to%20cover%20by%202%20inches.%20Bring%20to%20a%20boil,%20skimming%20the%20foam,%20and%20add%20one%20bay%20leaf%20and%201/2%20of%20an%20onion,%20chopped.%20Cover%20and%20let%20very%20gently%20simmer%20until%20the%20beans%20are%20tender%20but%20not%20mushy.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20place%20the%20meat%20in%20a%20large%20pot%20and%20cover%20with%20cold%20water.%20Add%20the%20other%20bay%20leaf%20and%20bring%20to%20a%20boil.%20Skim%20the%20foam%20and%20reduce%20the%20heat%20to%20a%20bare%20simmer.%20Let%20cook%20for%20about%2060%20minutes%20at%20a%20very%20slow%20simmer%20(if%20you%20simmer%20it%20harder,%20remove%20at%20about%2030%20minutes).%20I%20like%20lower%20and%20slower.%3C/p%3E%3Cp%3ERemove%20the%20meat,%20reserving%20the%20cooking%20broth,%20and%20set%20aside%20to%20cool.%20Boil%20the%20remained%20broth%20down%20to%201/2%20cup.%3C/p%3E%3Cp%3EDrain%20the%20beans,%20reserving%20about%201%20cup%20of%20the%20bean%20broth.%20Set%20both%20aside.%3C/p%3E%3Cp%3ECut%20the%20pork%20into%201/2-inch%20pieces--it%20should%20be%20juicy%20and%20barely%20cooked.%20Sprinkle%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EWhile%20the%20pork%20broth%20is%20reducing,%20heat%20a%20large,%20straight-sided%20skillet%20over%20medium%20high%20heat.%20Add%20the%20bacon%20grease%20(you%20can%20use%2050%25%20oil%20if%20the%20grease%20bothers%20you).%20When%20it%20is%20hot,%20add%20the%20onion%20with%20a%20pinch%20of%20salt%20and%20cook%20for%205%20minutes.%20Add%20the%20pork%20and%20garlic%20and%20cook%20for%20another%203%20minutes,%20then%20add%20the%20beans.%20Cook%20for%201%20minute.%20Stir%20in%20the%20dried%20chile%20powders%20and%20cumin.%20Crumble%20the%20oregano%20in.%20Cook%20for%201%20minute.%20Add%20the%20beer%20and%20reduced%20pork%20broth%20with%20a%20scant%20teaspoon%20of%20salt.%20Bring%20to%20a%20boil,%20reduce%20the%20heat%20to%20maintain%20a%20gentle%20simmer,%20and%20cover.%20Let%20simmer%20for%2030%20minutes.%20If%20it%20seems%20to%20have%20too%20little%20liquid,%20add%20some%20reserved%20bean%20broth.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20F.%20Add%20some%20fresh%20ground%20black%20pepper.%20Taste%20the%20beans%20for%20additional%20seasoning,%20but%20note%20that%20the%20broth%20will%20be%20decidedly%20beer-y%20at%20this%20point;%20this%20will%20mellow%20after%20baking.%20Mix%20in%20the%20chopped%20bell%20pepper,%20zucchini,%20pineapple%20and%20the%20pineapple%20juice.%3C/p%3E%3Cp%3EPlace%20the%20pork%20and%20beans%20with%20the%20veggies%20into%20a%20baking%20dish%20(2%201/2%20qt).%20Bake%20for%2045%20minutes,%20during%20which%20time%20a%20lot%20of%20the%20liquid%20will%20cook%20off%20(if%20it%20cooks%20off%20before%20the%2045%20minute%20mark,%20take%20it%20out%20then).%20My%20liquid%20never%20completely%20cooked%20off,%20so%20I%20served%20it%20as%20a%20delicious%20stew.%20My%20family%20enjoyed%20crumbling%20tortilla%20chips%20into%20it.%3C/p%3E){kind=link}
