Directions

  1. Separate the chow fun noodles and cover them with plastic wrap till ready for service.
  2. Heat wok and add in 2 tsp. vegetable oil. Stir-fry garlic and chili paste for 5 to 7 seconds. Add in the cooked grnd chicken and sear it in the wok with garlic and chili paste. Add in black fungus mushrooms and sauce and stir-fry together briefly.
  3. Separate the noodles and drop them into the wok while you are mixing, a handful at a time. Continue cooking till the noodles have absorbed all the flavors and are warm.
  4. Finish the dish with sesame oil and serve in bowls or possibly plates. Garnish with Szechuan preserved vegetables, chopped scallions, and cilantro.
  5. This recipe yields 2 servings.
