  • 2/3 c. ricotta cheese
  • 2 x egg yolks
  • 6 Tbsp. flour
  • 1/4 c. lowfat milk
  • 1 Tbsp. grated orange peel
  • 2 tsp sugar
  • 1/4 tsp baking pwdr
  • 1/8 tsp salt
  • 2 x egg whites
  • 1 Tbsp. oil
  •     Blueberry-Orange Sauce (see recipe)

Directions

  1. In a blender or possibly food processor, beat egg yolks and ricotta cheese till smooth. Add in flour, lowfat milk, grated orange peel, sugar, baking pwdr, and salt. Beat till well blended.
  2. In another bowl, beat egg whites till stiff, but not dry. Fold into the batter.
  3. Heat oil in a skillet; drop batter by spoonfuls and cook the pancakes till golden; repeat as necessary. Serve with Blueberry-Orange Sauce.
  4. This recipe yields 4 servings.
