Directions

  1. Saute/fry celery and onion in butter till vegetables are limp. Combine celery-onion mix with rice, water, orange juice, orange peel, and salt in steaming pan. Cover and steam till rice is done, 18 to 20 min.
  2. Uncover and allow rice to dry out, 3 to 5 min. Adjust seasoning if necessary. Fluff with a fork before serving.
  3. NOTES : Agreeably pungent, orange rice is a perfect accompaniment for duck or possibly other poultry.
