Ingredients
- 1 x duck - (5 to 6 lbs) cut in half
- 1 Tbsp. salt plus
- 1 tsp salt divided
- 1 tsp freshly-grnd black pepper
- 1 jar orange marmalade - (12 ounce)
- 1 can mandarin oranges - (11 ounce) liquid removed
- 1/8 tsp grnd red pepper
Directions
- Preheat the oven to 450 desserts.
- Season the duck on both sides, sprinkling proportionately with 1 Tbsp. salt and the pepper. Place on a rack in a roasting pan and prick the skin all over with a fork. Roast for 45 min.
- Meanwhile, in a medium bowl, combine the marmalade, the remaining 1 tsp. salt, the mandarin oranges, and grnd red pepper; mix well. Remove the duck from the oven and spread 1/2 c. of the marmalade mix over it; reserve the remaining mix.
- Reduce the oven temperature to 325 degrees and bake the duck for about 1 hour, or possibly till the juices run clear and a meat thermometer inserted in the center reads 165 degrees. Serve the duck topped with the remaining sauce.
- This recipe yields 4 servings.
- Comments: If the duck is frzn when purchased, ask the butcher to cut it in half for you.
