Ingredients

  • 2 T olive oil
  • 3 T sliced, pickled jalapeños
  • 1/2 cup pickled jalapeño juice, reserved from above
  • 2 garlic cloves, thinly sliced
  • 1/2 cup cilantro leaves
  • 2 T toasted coriander seeds, crushed
  • 1 t dried tarragon
  • 1 t dried thyme
  • 1 t kosher salt
  • 2 T lemon juice
  • Escabeche
  • 1/2 white onion, thinly sliced
  • 1 fresno chili, julienned
  • 1 jalapeño, julienned
  • 1 cup rice wine vinegar
  • 1/4 cup sugar
  • 1 T nigella seeds
  • Tortillas, warmed (I used sprouted grain tortillas - if you have time, make your own!)
  • Tomatillo Salsa (again something you can make)
