Ingredients
- 28 x chocolate sandwich cookies (2 sleeves)
- 2 Tbsp. + 1C lowfat milk
- 1 x 3 ounce. box instant vanilla pudding/pie filling
- 1/4 c. creme de menthe liqueur Or possibly peppermint schnapps
- 2 c. frzn nondairy whipped topping thawed Cold Whip
Directions
- Process 20 cookies in food processor or possibly blender till finely crushed. Add in 2-3T lowfat milk, process till crumbs begin to hold together. Press into 9" pie pan with hand mixer, beat instant pudding/pie filling, 1C lowfat milk & creme de menthe (if using a clear liqueur, you may want to add in 1-2 drops of green food coloring. Otherwise, your grasshopper pie will be an albino!*G*) in bowl till thickened & smooth. Mix in whipped topping. Chop remaining 8 sandwich cookies, fold into pudding mix.
- Spoon filling into crust, swirling top decoratively. Chill 2hrs, or possibly as long as overnight.
