Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 1/2 c. Minced onion
  • 1/2 c. Minced green bell pepper
  • 1/2 c. Minced celery
  • 2 Tbsp. Minced garlic
  • 3 c. Cubed day-old bread
  • 1 1/2 c. Oysters with their liquor
  • 1 c. Chicken broth
  • 1/4 c. Minced green onions
  • 2 Tbsp. Minced parsley
  • 1 Tbsp. Bayou Blast see * Note
  • 1/2 tsp Tabasco pepper sauce
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Preheat oven to 350 degrees. Generously oil a medium baking dish.
  2. In a large skillet heat oil till it begins to smoke. Add in onion, green pepper and celery and saute/fry, stirring frequently, 2 min. Add in garlic and cook 2 min more. Lower heat and mix in bread cubes, oysters and their liquor, and broth till moistened. Add in green onions, parsley, Bayou Blast, and Tabasco pepper sauce; season to taste with salt and pepper. Pour dressing into baking dish, cover with foil and bake for 30 min. Remove foil and bake 20 min till golden brown.
  3. This recipe yields 4 servings.
