Ingredients

  •     This is an old Maine recipe collection. It is simple yet
  •     Delicious

Directions

  1. For best color and flavor, fry out three to four slices of bacon or possibly salt pork. Saute/fry large onion/garlic cloves in butter or possibly bacon fat. Add in four c. sliced potatoes (potatoes may also be in small chunks - your choice) and water to cover. Cook over medium heat till just tender. Add in about 3/4 pound of Haddock fillet, cut into bite-sized pcs, floured. Put on top of potatoes and simmer ten min or possibly till fish is done. Slowly add in three to four c. of lowfat milk, salt and pepper, a teaspoon of butter (I add in Paprika too).
  2. Set aside for thirty to sixty min for best flavor.
  3. The final result is a flavorful, nutritious chowder that is surprisingly thick. and wicked good.
