%20and%20before%20Patsy%20attempted%20to%20steal%20it%20off%20the%20kitchen%20table%20where%20it%20was%20being%20carved.%20She%20was%20caught%20by%20my%20dad%20so%20no%20harm%20was%20done.%20I%20guess%20it%20looked%20so%20good%20you%20can't%20blame%20a%20girl%20for%20trying.%3C/p%3E%3Cp%3EI%20woke%20up%20this%20morning%20and%20low%20and%20behold%20Muffcakes%20were%20everywhere,%20or%20almost%20everywhere%20courtesy%20of%20Salty%20Seattle%20The%20Little%20Foodie%20I%20Am%20A%20Feeder%20and%20La%20Vie%20en%20Route.%20So%20if%20you%20want%20to%20revel%20in%20Muffcakes%20check%20them%20out.%20I%20however%20am%20offering%20something%20entirely%20different%20this%20morning%20because%20I%20couldn't%20get%20off%20my%20lazy%20butt%20and%20execute%20my%20Muffcake%20Idea,%20and%20that%20is%20the%20classic%20Indian%20Holiday%20Cookie%20Nan%20Khatai.%3C/p%3E%3Cp%3EOf%20course,%20when%20one%20thinks%20of%20holiday%20cookies,%20India%20is%20not%20the%20first%20place%20that%20comes%20to%20mind.%20But%20Boy%20Howdy,%20they%20have%20an%20absolute%20delight%20of%20a%20buttery%20little%20cookie%20that%20works%20perfectly%20for%20those%20holiday%20cookie%20parties%20we%20find%20ourselves%20at.%3C/p%3E%3Cp%3ENan%20Khatai%20is%20a%20big%20favorite%20in%20India%20and%20Pakistan%20and%20whips%20up%20incredibly%20fast.%20I%20made%20a%20big%20batch%20last%20night%20in%20practically%20no%20time%20when%20we%20had%20company.%20So%20lazy%20cookie%20cravers,%20this%20one%20is%20for%20you.%3C/p%3E%3Cp%3EIndian%20Shortbread%20Cookies%3C/p%3E%3Cp%3EHere's%20what%20to%20do:%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20355%20degrees.%3C/p%3E%3Cp%3ESet%20this%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20beat%20together:%3C/p%3E%3Cp%3E1%20and%201/4%20stick%20of%20unsalted%20butter%3C/p%3E%3Cp%3E2%20tbs%20of%20%20plain%20yogurt%3C/p%3E%3Cp%3E1%20can%201/3%20cup%20of%20powdered%20sugar.%3C/p%3E%3Cp%3EMix%20it%20all%20up%20until%20it's%20nice%20and%20fluffy.%20%20Add%20the%20sifted%20flour%20mix%20to%20the%20butter%20and%20sugar.%3C/p%3E%3Cp%3EKnead%20it%20with%20your%20hands%20until%20you%20have%20a%20nice%20soft%20dough.%20You%20Can%20add%20in%204%20to%205%20Tbs%20of%20whole%20milk%20while%20you%20are%20kneading%20if%20you%20need%20extra%20moisture.%3C/p%3E%3Cp%3EIn%20a%20spice%20grinder%20mix%20together%202%20Tbs%20of%20pistachios%20and%202%20tps.%20of%20ground%20cardamom.%3C/p%3E%3Cp%3ELine%20a%20cookie%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3ERoll%20the%20cookie%20dough%20into%20lilttle%20balls%20and%20set%20them%20down%20on%20the%20cookie%20sheet.%20Make%20an%20indentation%20in%20each%20ball%20with%20your%20index%20finger%20and%20fill%20the%20indentation%20with%20a%20bit%20of%20the%20ground%20pistachio%20and%20cardamom%20mixture.%3C/p%3E%3Cp%3EBake%20the%20cookies%20in%20the%20oven%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EThen%20take%20them%20out%20and%20cool%20them%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EDepending%20on%20the%20size%20of%20your%20balls%20...ahem,%20cookie%20balls%20...this%20recipe%20can%20make%20as%20many%20as%203%20dozen%20cookies.%3C/p%3E%3Cp%3EThere%20are%20many%20variations%20on%20this%20recipe.%20Sometimes%20the%20cookies%20have%20a%20crisscross%20pattern%20cut%20in%20them%20before%20baking.%20Sometimes%20they%20are%20flattened%20and%20dusted%20with%20almonds%20and%20cardamom.%20Other%20times%20they're%20baked%20with%20a%20single%20almond%20half%20in%20the%20center%20like%20Chinese%20almond%20cookies.%20I%20personally%20would%20like%20to%20fill%20them%20with%20a%20bit%20of%20chutney%20and%20I%20think%20I'll%20try%20that%20next%20time,%20because%20these%20little%20shortbread%20cookies%20were%20so%20meltingly%20good,%20there%20is%20definitely%20going%20to%20be%20a%20next%20time.%3C/p%3E%3Cp%3EI%20served%20them%20with%20warm%20chai...%20Mmmmmmmm%20delicious.%20So%20those%20are%20the%20universal%20Indian%20cookie%20just%20waiting%20to%20be%20experimented%20on.%20As%20for%20me,%20I%20can't%20get%20Muffcakes%20out%20of%20my%20head%20I%20have%20a%20recipe%20I'm%20thinking%20of,%20but%20as%20usual,%20I'm%20a%20day%20late%20and%20a%20muffcake%20short.%3C/p%3E){kind=link}
