Ingredients

  • 1/2 c. Fine maize flour
  • 1/2 c. Plain flour
  •     Salt to taste
  •     Oil to deep fry
  • 1 c. Grated cooking cheese
  • 1/2 c. Fresh cream
  • 1 Tbsp. Butter softened
  • 1 tsp Mustard pwdr or possibly paste
  • 1/2 tsp Vinegar
  • 1/2 tsp Crushed red chilli or possibly paprika
  •     Salt to taste

Directions

  1. For nachos:Mix flours, salt and knead into soft pliable dough with water.
  2. Divide into 2 parts. Roll into large rectangles on a clean work surface.
  3. Use dry flour to dust the surface for ease.
  4. Cut first into 2" strips, and then into 2" squares.
  5. Then halve into triangles. Deep fry until lightly golden brown.
  6. Drain and keep aside to cold.
  7. For mustard cheese sauce:Mix all ingredients together until a smooth paste is formed.
  8. Add in some lowfat milk if too thick.
  9. Spread nachos in a shallow casserole, pour sauce on top.
  10. Bake in a warm oven at 250C for 10 min or possibly until sauce is lightly browned.
  11. Serve warm with hot garlic bread or possibly as is.
  12. Making time: Nachos-30 min; Remaining-25 min
  13. Makes: 4-5 helpings
  14. Shelflife: The fried nachos can be stored outside for 1 week or possibly more.
