Ingredients

  • 2 c. uncooked black beans
  • 2 x bay leaves
  • 1 Tbsp. oregano
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 c. lard
  • 1 c. diced bacon
  • 1 c. diced chorizo
  • 1 c. diced ham
  • 1 x white onion diced
  • 1 x red bell pepper diced
  • 1 x green bell pepper diced
  • 1 Tbsp. minced garlic
  • 1 Tbsp. cumin
  • 1 c. raw rice
  • 1 x banana leaf

Directions

  1. Preheat oven to 350 degrees.
  2. Cook black beans in water with bay leaves, oregano and salt till done, approximately 1 hour. Strain and keep the liquid.
  3. Heat lard in a medium-sized saute/fry pan over medium heat and cook bacon till it begins to render fat. Add in chorizo, ham, onions, peppers, and garlic. Cook for 5 min, then add in cumin. Next add in cooked beans, rice, and reserved bean liquid.
  4. Cover with a banana leaf and place in oven. Cook for approximately 20 min or possibly till rice is done and all the liquid is incorporated.
