Monk's Pissaliere (A Sort Of A Pizza) Recipe

Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 6 x Onions peeled & sliced
  • 1 lb Frzn puff pastry,
  •     Defrosted
  • 2 Tbsp. Fresh savory or possibly thyme
  • 3 med Tomatoes peeled
  • 2 tins anchovy fillets rinsed
  •     Well
  • 1/2 c. Black olives (preferable Nicoise)
  •     Freshly grnd pepper (to Taste)

Directions

  1. Heat extra virgin olive oil in frypan over medium heat. Add in onion and cook till soft and golden brown but not brown. This will take approx. 30-40 min stirring frequently and watching carefully so which onions don't brown. Add in extra oil if necessary. Meanwhile roll out pastry very thinly on floured surface, then place on a greased 15x9 inch(2L) pan.
  2. Generously prick with fork and chill. When onions are cooked slightly. PREHEAT oven to 450F.(220C) spread cooled onions over pastry. Slice tomatoes and arrange over pastry. Slice tomatoes and arrange over onions. Top with anchovies ( if desired them) and olives. Season with fresh grnd pepper ( to taste) BAKE 20 min.
  3. Cut into squares and serve hot or possibly at room temperature. Can be served with drinks or possibly as a first course for 6. Friar Bob, The MONKS'
