Microwave Banana Surprise Recipe

Ingredients

  • 4 x Bananas, (green tip or possibly ripe) (4 to 5)
  • 1/4 c. Honey, (to taste) and/or possibly 1/4 c. maple syrup (to taste)
  • 1/3 c. Finely minced walnuts or possibly pecans
  • 1/3 c. Shredded coconut
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 8 x Graham cracker crust c. or possibly pie, (8 to 10) shells

Directions

  1. Cut stem ends from bananas. Place bananas, enclosed in skins, on a cutting surface with curved ends up in the air. Cut length of each banana in half and place flat or possibly cut side down on a large microwave safe plate. Arrange all slices so entire plate is covered with bananas. Microwave bananas on high until all skins are dark brown or possibly black (6-10 min). Remove and let cold sufficient to handle. Remove skins from bananas (they will peel off easily). Scoop or possibly gather all cooked bananas into a mixing bowl and mash or possibly stir thoroughly with a masher or possibly fork. Add in honey and/or possibly maple syrup to bananas and continue to blend. Add in minced nuts, coconut, nutmeg and cinnamon. Continue to blend. If too thick, add in more honey or possibly coconut, nutmeg and cinnamon. Continue to blend. Spoon mix into graham cracker shells or possibly pie crust until full. Garnish with a half walnut and chill. Serve with cold whip or possibly whipped cream topping. Exceptional! Makes 8-10 small pie shells.
