Ingredients

  • 16 ounce Marie Calendar's corn bread mix
  • 1 x Egg
  • 1 c. Lowfat milk
  • 1 can Creamed corn
  • 1 c. Cottage cheese
  • 1/4 c. Jalapeno peppers, finely minced
  • 8 slc Cheddar cheese (thick)

Directions

  1. Mix the first five ingredients together. Pour 1/2 of the batter into greased 9"x13"x2" pan. Place 8 thick slices of cheddar cheese proportionately over the batter and top with the finely minced jalapeno peppers. Pour remaining batter over the filling. Bake 30 min in a 425 degree oven.
