Mexican Apple Pie Recipe

Ingredients

  • 1 1/2 c. sugar
  • 2 c. water
  • 1/2 c. butter or possibly margarine -- melted
  • 4 c. Golden brown Delicious apples -- peeled and minced
  • 2 tsp grnd cinnamon
  • 10 x flour tortillas -- 6" Whipped cream Grnd cinnamon

Directions

  1. Combine sugar and water in a small saucepan; cook over medium heat, stirring constantly, till sugar melts. Set aside. Place butter in a 13- x 9- x 2 inch baking dish; set aside. Combine apples and 2 tsp. cinnamon, stirring to coat. Place about 1/2 c. apple mix down center of each tortilla. Roll up, and place, seam side down, in baking dish. Pour sugar mix over top of tortillas, and cover with aluminum foil. Bake at 350 degrees F. for 30 min.
  2. Uncover and bake 25 to 30 min. Let stand 10 min. Serve hot with whipped cream; sprinkle with additional cinnamon, if you like.

  6. Savory rice2 c rice4 green onions, chopped2 bouillon cubes2 slices of minced bacon or possibly hamwater to cover about 1 inch.
  7. Veggie tips
  8. Place fresh veggies into cooker and add in not more than 1 Tbsp water. Don't addSalt. Stop microwave and stir after about 5 min, and test for doneness.
