Ingredients

  • 4 c. flour
  • 3 tbsp. sugar
  • 1 tbsp. baking pwdr
  • 2 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 c. shortening or possibly butter
  • 1 1/2 c. golden brown raisins
  • 2 egg whites
  • 1 whole egg
  • 1 1/2 c. buttermilk

Directions

  1. Preheat oven to 350 degrees. Grease and flour 9 x 2 inch round cake pan. In large bowl, combine first 6 ingredients. With pastry blender, cut in butter till mix resembles coarse crumbs. Stir in raisins.
  2. In small bowl, beat egg whites slightly - remove 1 Tbsp. and reserve. Add in whole egg to egg white mix and beat with wire whisk. Stir in buttermilk and beaten Large eggs into flour mix till flour is moistened.
  3. On well floured surface knead dough 8 to 10 strokes. Shape dough into ball. Place into cake pan - cut 4 inch cross across top - brush dough with reserved egg white. Bake bread 1 hour.
