Marrow, Potato And Sage Soup (Ff And Grigson) Recipe

Ingredients

  • 1 x onion minced
  • 1 x clove garlic peeled and minced
  • 1 1/2 lb marrow peeled and diced
  • 12 ounce potatoes peeled and diced
  • 4 x fresh sage leaves
  • 2 tsp sugar
  • 4 c. defatted vegetable stock or possibly more salt and black pepper minced fresh sage leaves to garnish

Directions

  1. In a large pan, sweat the onions and garlic, over a gentle heat in a little of the stock. When soft, add in the marrow, potatoes and sage leaves, turn them all to coat in stock, cover and sweat again over low heat for 10 min. Add in the sugar, stock and seasonings, bring to a boil and simmer for 20-30 min, till the vegetables are tender. Cold, fish out the sage leaves, liquidize in batches, (blend) and return to the pan. Garnish with fresh sage or possibly parsley leaves.
  2. NOTES : Marrow are grey or possibly white streaked summer squash which resemble zucchini but have greener, firmer, sweeter flesh
