Ingredients

  • 4 x Chicken Breasts
  • 2 Tbsp. Grnd Ginger
  • 1 tsp Cinnamon
  • 1 x Onion, (minced)
  • 2 tsp Grnd Almonds
  • 30 ml Extra virgin olive oil
  • 1/2 x Lemon, (juice) Salt and Pepper A few strands of saffron
  • 100 gm Raisins
  • 100 gm Blanched Whole Almonds
  • 2 x Plum Tomatoes, (minced)
  • 100 gm Cooked Chick Peas Black Olives Extra virgin olive oil

Directions

  1. Marinade
  2. 1. Mix all the marinade ingredients together and season with salt and pepper.
  3. Chicken
  4. 2. Score the chicken well, making deep incisions.
  5. 3. Season the chicken with salt and pepper and coat with the marinade.
  6. Leave for approximately 1 hour.
  7. 4. Barbecue till cooked and serve with a salad.
