Ingredients
- 1/2 c. Unsalted Butter
- 3 lrg Egg Yolks
- 1 1/2 tsp Warm Water
- 2 tsp Orange Juice
- 1 tsp Lemon Juice
- 1 tsp Chopped Orange Zest
- 1/4 tsp Salt
- 2 dsh Tabasco Sauce
Directions
- Heat butter. Heat egg yolks and 1-1/2 ts water in top of double boiler over simmering water, whisking constantly, till yolks triple in volume.
- Remove pan from water; whisk butter very gradually into egg yolks. Whisk in remaining ingredients. Let stand at room temperature till ready to serve. Serve with cooked fresh asparagus.
