%20and%20definitely%20worth%20the%20time%20it%20takes%20to%20make,%20which%20isn't%20all%20that%20much,%20and%20more%20importantly,%20lime%20curd%20is%20worth%20the%20calories!!!%3C/p%3E%3Cp%3ENow,%20how%20do%20you%20use%20lime%20curd?%20%20Well,%20if%20you're%20smart,%20you'll%20use%20it%20in%20a%20tart.%20%20But,%20my%20oh%20my,%20use%20it%20in%20a%20pie!%20%20And%20as%20a%20filling,%20it%20will%20take%20the%20cake!%3C/p%3E%3Cp%3EOver%20the%20years%20I%20have%20tried%20a%20lot%20of%20different%20lime%20curd%20recipes,%20but%20this%20is%20the%20one%20I%20always%20come%20back%20to.%20%20I%20got%20it%20out%20of%20the%20Minneapolis%20newspaper%20in%201991%20-%20it's%20fool-proof,%20and%20I%20should%20know!%3C/p%3E%3Cp%3EWith%20a%20zester,%20remove%20as%20much%20of%20the%20zest%20as%20you%20can%20without%20getting%20the%20white%20pith.%20%20Juice%20the%20limes%20to%20get%201/2%20cup%20of%20juice%20and%20set%20juice%20aside.%20%20In%20the%20bowl%20of%20a%20food%20processor,%20or%20blender,%20combine%20the%20zest%20and%20the%20sugar%20and%20process%20for%202%20minutes%20or%20until%20the%20zest%20is%20in%20very%20fine%20pieces.%20%20Add%20the%20eggs,%20one%20at%20a%20time,%20and%20then%20add%20the%20juice%20and%20salt.%20%20Mix%20until%20combined.%20%20Pour%20mixture%20into%20a%20saucepan%20and%20over%20medium%20low%20heat%20,%20stir%20until%20it's%20thickened,%20about%2010%20to%2015%20minutes.%20%20Curd%20will%20thicken%20at%20about%20175%20degrees%20and%20will%20thicken%20a%20bit%20more%20as%20it%20cools.%20%20Remove%20from%20heat%20and%20allow%20to%20cool%20slightly,%20then%20put%20in%20refrigerator%20to%20cool%20completely.%20%20This%20makes%20enough%20lime%20curd%20to%20fill%2010%20tart%20shells%20or%20one%209-inch%20pie%20crust.%20%20If%20you%20use%20it%20as%20the%20filling%20between%20cake%20layers%20and%20on%20top,%20you'll%20have%20extra%20left%20over...cook's%20bonus!%20%20%20Keep%20lime%20curd%20refrigerated.%3C/p%3E%3Cp%3ELime%20curd%20is%20also%20great%20on%20scones%20or%20toast%20for%20breakfast!%3C/p%3E){kind=link}
