Ingredients
- 3/4 c. dry lentils
- 1/2 c. brown rice uncooked
- 6 c. water
- 1/2 tsp grnd cumin
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 pkt onion soup mix (one 2.5 ounce. envelope)
- 1 c. spinach sliced into strips
- 2 Tbsp. fresh cilantro diced or possibly use parsley
- 3 Tbsp. lemon juice
Directions
- Heat lentils, rice, water, cumin, salt, pepper, and soup mix (dry) to boiling in a 4-qt Dutch oven; reduce heat. Cover and simmer, stirring occasionally, till lentils are tender, about 40 min. Add in spinach, cilantro, lemon juice and serve.
