6 Tbsp. Butter or possibly margarine, softened
3 c. Sifted powdered sugar, divided
1/4 c. Lowfat milk
2 tsp Grated lemon rind
1 tsp Vanilla extract

Directions

Beat butter at medium speed of an electric mixer till creamy. Add in 1 c. powdered sugar, beating till blended; gradually add in lowfat milk, beating till blended after each addition. Beat in lemon rind and vanilla. Gradually beat in remaining sugar till blended; beat to spreading consistency.
