Ingredients
- 2/3 c. Boiling water
- 1 pkt Lemon flavor jello
- 1/2 c. Cool water Ice cubes
- 2 tsp Grated lemon peel
- 1 Tbsp. Fresh lemon juice
- 8 ounce Tub cold whip
- 1 c. Sliced strawberries
- 1 x Graham cracker pie crust Berries for garnish Mint for garnish
Directions
- 1. Stir boiling water into gelatin in large bowl at least 2 min till completely dissolved.
- 2. Mix cool water and ice to make 1 1/4 c.. Add in to gelatin, stirring till slightly thickened. Remove any remaining ice.
- 3. Stir in lemon peel, juice and whipped topping with a wire whisk till smooth.
- 4. Stir in strawberries. Chill 20 to 30 min or possibly till mix is very thick and will mound.
- 5. Spoon into crust. Chill 6 hrs or possibly overnight till hard. Garnish with additional fruit and whipped topping and mint, if you like.
