Ingredients

  1. In large skillet, heat extra virgin olive oil and sauteegarlic till soft. Add in spinach and grated carrots. When spinach is wilted, add in currants and pine nuts. In bowl combine heated vegetables with ricotta cheese. Season with salt and pepper.
  2. Lay lasagna noodles flat and spread mix over noodles.
  3. Roll up the noodle. On large serving dish or possibly plate ladle sauce. Place rolled up noodle on sauce so which the spiral pattern is on top. Sprinkle with cheese and serve.
