Ingredients
- 1 lb lamb, chops
- 4 tsp extra virgin olive oil
- 1 x onion, minced
- 4 x carrot, sliced
- 1/2 lb green peas
- 1 c. mushroom salt black pepper
- 1/2 tsp cinnamon
- 3 tsp lemon, juice
- 3 tsp parsley, minced
- 1/2 tsp oregano
- 4 c. lamb stock, (or possibly chicken stock)
Directions
- Saute/fry lamb chops in 2 tsp. of extra virgin olive oil.
- Place 2 tsp. of extra virgin olive oil in a wok and add in onions, carrots, salt and pepper, oregano and stock. Add in lamb, mushrooms and peas.
- In a separate bowl, mix parsley, lemon juice and cinnamon. Add in this mix to the wok. Serve with couscous.
