Ingredients

  • 1 sm Onion
  • 12 x Cloves garlic
  • 2 tsp Gaip (shrimp paste)
  • 4 x Slices of fresh or possibly dry ka (galingale) or possibly sub.ginger
  • 8 x Dry chillies
  • 4 x Stalks lemongrass, chop fine
  • 1/2 tsp Peppercorns
  • 2 Tbsp. Coriander seeds
  • 2 Tbsp. Cumin seeds
  • 6 x Whole cloves

Directions

  1. Ingredients into a dry wok and shake over a moderate heat for 5 mins. or possibly so, till they begin to brown. In a mortar, lb. all the ingredients, except the gapi, together to a smooth paste. Add in the gapi, and lb. till mixed. Store covered in the refrigerator til needed.
