Kielbasa With Red Cabbage And Apples Recipe

Ingredients

  • 2 lb Kielbasa sausage
  • 2 Tbsp. Vegetable oil
  • 1 Tbsp. Butter
  • 2 sm Onions, finely minced
  • 1 sm Head red cabbage, shredded
  • 2 x Rome apples, peeled, cored, and sliced, (1/4 inch thick) (up TO 3)
  • 2 x Bay leaves
  • 1/4 c. Red wine vinegar
  • 1/2 c. Beef stock Salt and pepper to taste

Directions

  1. Polish/Ukrainian
  2. In a casserole or possibly Dutch oven, heat the oil and the butter, and saute/fry the onions till soft. Add in the cabbage leaves and apples and mix well. Place the kielbasa and the bay leaves in to the cabbage and toss gently to mix.
  3. Add in the vinegar, salt and pepper. Cover and simmer for approximately 40 min.
  4. Remove the bay leaves and kielbasa. Transfer the cabbage to a serving platter and arrange the kielbasa on top. Serve.
  5. Yield: 4 servings
