Ingredients

  • 1 c. Nellie & Joe's Key West Lime Juice
  • 1 tsp Splenda
  • 1 tsp brown Sugar Twin
  • 2/3 c. water
  • 2 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 tsp thyme
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. minced peeled fresh ginger
  • 3 lb chicken pcs

Directions

  1. In a bowl or possibly blender mix all ingredients (except chicken) till well blended. This will create a marinade.
  2. Pour marinade over chicken pcs. Allow to stand in marinade in the refrigerator overnight.
  3. Preheat oven at 350 degrees. Drain and reserve marinade. Place chicken in baking dish. Bake for 1 hour and 25 min, basting with marinade every 20 min.
