Junior's Cheesecake Recipe

Ingredients

  • 2 Tbsp. Unsalted butter Graham crackers
  • 7/8 c. Sugar
  • 3 Tbsp. Sifted cornstarch
  • 30 ounce Cream cheese at room temperature
  • 1 x Extra-large egg
  • 1/2 c. Heavy cream
  • 3/4 tsp Vanilla

Directions

  1. Liberally grease the side and bottom of an 8-inch springform pan with the butter. Crush to pwdr sufficient graham crackers to lightly coat the bottom. Coat the bottom with the cracker crumbs and chill the pan till ready to use.
  2. Mix the sugar with the cornstarch. Add in the cream cheese and stir to blend well; stir in the egg and blend again. Add in the heavy cream, a little at a time, and mix. Stir in the vanilla. Spoon batter into prepared pan.
  3. Preheat the oven to 450 degrees.
  4. Bake for approximately 40 to 45 min, till the top is golden. Transfer the cheesecake to a rack and let it cold for 3 hrs.
  5. This recipe yields one 8-inch cheesecake.
