Italian Chicken With Garlic And Lemon Recipe

Ingredients

  • 15 x chicken thighs, or possibly equal amount of your favorite chicken part
  • 8 lrg potatoes, peeled and quartered
  • 1 quart vegetable oil for frying, reserve half a c. oil for sauce (Note: I used extra virgin olive oil and much less than is called for)
  • 1/2 c. wine vinegar
  • 5 x lemons, juiced
  • 10 x cloves crushed garlic
  • 2 Tbsp. dry oregano
  • 2 Tbsp. dry parsley
  • 1 x onion, chopped salt and pepper to taste

Directions

  1. Preheat the oven to 350F degrees.
  2. Arrange the chicken in a 10 x 15 inch enameled roasting pan. In a large skillet over medium-high heat, fry the potatoes in half-inch deep oil till golden, then put them in the pan with the chicken.
  3. Combine the vinegar, lemon juice, garlic, oregano, parsley, onion, salt and pepper with the reserved half c. of oil. Pour this mix over the chicken and potatoes.
  4. Bake in the preheated oven for 1.25 hrs, basting the chicken and potatoes with the sauce. Let rest for 5 min and serve warm.
