Honeyed Crisp Doughnuts Recipe

  • 250 gm Plain flour, (8oz)
  • 1/4 tsp Salt
  • 6 gm Sachet of easy blend dry yeast or possibly 15g, (1/2oz) fresh yeast ( 1/4oz)
  • 270 ml Hot water, (9floz)
  • 1/2 tsp Sugar, if fresh yeast is used
  • 300 ml Vegetable oil, about (1/2 pint)
  • 6 tsp Good quality aromatic clear, (6 to 7) honey
  • 1 tsp Cinnamon

Directions

  1. Sift the flour and salt into a bowl and stir in the dry yeast if using.
  2. Add in the hot water slowly while beating either with an electric mixer or possibly a balloon whisk till all the water has been added and the mix is smoooth and lightly frothy. This will take 2-3 min.
  3. Cover with a tea towel and let it rest in a hot place for one hour, till it has doubled its size and looks frothy.
  4. If using fresh yeast, dissolve the yeast in about 60ml (2 floz) of the hot water (about 40 C, 100 F). Add in the sugar to activate it and let it stand in a hot place for about 15 min, till it starts to froth. (If the water is too warm it will kill the yeast).
  5. Pour the dissolved yeast into the middle of the sifted flour and salt, beating continuously. Add in the remaining hot water slowly, while beating at the same time, till the mix becomes smooth, soft and elastic.
  6. Cover with a tea towel and leave in a hot place for about 2 1/2 hrs till it rises and almost doubles in size.
  7. Heat the oil in a saucepan or possibly deep-fryer, till very warm but not smoking.
  8. Drop tsp. of the mix in to the oil, about 6-8 at a time. Dip the tsp. into a c. of cool water between each addition to prevent stickiness. The doughnuts puff up and rise to the surface within seconds.
  9. Turn them over and as they become pale golden brown all over (it only takes a minute) lift them out with a slotted spoon and drain them on absorbent paper. You will have around 30 doughnuts.
  10. Serve 5-6 on each plate, drizzle a tsp. of honey all over, sprinkle on some cinnamon and serve immediately.
