Ingredients

  • 1 pkg. frzn hashbrown potatoes
  • 1/2 c. minced onions
  • 1/3 c. minced bell pepper
  • 8 ounce. lowfat sour cream
  • 1 can cream of chicken soup
  • 4 to 6 bacon strips, fried crisp and crumbled
  • 4 ounce. pimientos, diced
  • Onion tops, minced
  • 2 tbsp. butter, melted
  • Corn flakes, crushed
  • 2 tbsp. mayonnaise

Directions

  1. Mix corn flakes and butter to topping. Set aside. Mix all remaining ingredients and pour into a buttered rectangular pan. Top with corn flakes topping and bake uncovered at 350 degrees for 45 to 60 min.
