Haddock In Herb Marinade Recipe

Ingredients

  • 1 sm Onion, finely minced
  • 2 x Cloves garlic, finely minced
  • 1 x 15 grams pac herbs for stuffing, finely minced
  • 6 Tbsp. Extra virgin olive oil Juice and zest of 1/2 lemon
  • 400 gm Haddock fillets, (13oz)
  • 2 Tbsp. Sunflower oil

Directions

  1. For the marinade, blend all the ingredients together and pour over the haddock fillets, cover and leave to marinate in the refrigerator for 30 min.
  2. Heat the oil in a large frying pan. Remove the fish from the marinade and cook for approximately 4-5 min on each side.
  3. Add in the remaining marinade to the pan and cook gently for 5 min.
  4. Serve on a leafy salad with new potatoes or possibly noodles.
  5. NOTES : A deliciously light marinade that brings out the flavour of the haddock.Ideal served with a green salad, potatoes or possibly noodles.
