- Asparagus & Cheddar Soup
- 2 TBS. butter
- 1 yellow onion, diced
- 1 garlic clove
- 2 TBS. all-purpose flour
- 1 asparagus bunch, trimmed and chopped into 1-inch pieces
- 3 c. chicken stock
- sea salt, to taste
- freshly ground pepper, to taste
- 4 oz. sharp cheddar cheese, at room temp, shredded
- Croutons, to garnish

.%20Erin%20is%20the%20Editor%20in%20Chief%20of%20the%20new%20magazine%20Craft%20which%20is%20debuting%20this%20June,%20and%20Alan%20and%20I%20have%20enjoyed%20many%20a%20fine%20dining%20experience%20here%20in%20Sonoma%20with%20her%20and%20her%20husband%20photographer%20Phil%20Jimcosky.%20Just%20looking%20at%20this%20delicious%20recipe%20this%20foggy%20morning,%20and%20seeing%20all%20the%20fresh%20asparagus%20out%20there%20in%20the%20markets%20makes%20me%20want%20to%20get%20into%20my%20kitchen...oh%20wait%20I%20can't.%20But%20you%20can!!%20Lucky%20you.%3C/p%3E%3Cp%3EAsparagus%20&%20Cheddar%20Soup%3C/p%3E%3Cp%3ESpring%20has%20sprung%20and%20it%20is%20this%20time%20of%20year%20that%20a%20food%20writer%E2%80%99s%20fancy%20turns%20to%20thoughts%20of%20the%20year%E2%80%99s%20first%20farmer%E2%80%99s%20markets,%20ramps,%20and%20of%20course%20asparagus.%20This%20food%20writer%20also%20happens%20to%20be%20in%20the%20process%20of%20building%20a%20new%20startup%20magazine,%20so%20thoughts%20of%20contributor%20deadlines,%20graphic%20design,%20and%20finishing%20that%20darn%20media%20kit%20tend%20to%20smother%20the%20more%20pleasant%20edible%20thoughts.%20In%20other%20words,%20if%20I%20want%20to%20savor%20the%20delights%20of%20the%20season,%20I%20had%20better%20do%20it%20quickly%20like%20with%20this%20Asparagus%20&%20Cheddar%20Soup,%20because%20something%20that%20needs%20my%20attention%20now%20is%20coming%20down%20the%20pipe.%3C/p%3E%3Cp%3EI%20am%20from%20the%20Pacific%20Northwest,%20where%20we%20grow%20spectacular%20asparagus.%20You%20can%20imagine%20my%20joy%20in%20finding%20that%20we%20have%20incredible%20asparagus%20here%20at%20my%20temporary%20home%20here%20in%20the%20D.C.%20Metro%20Area.%20I%20have%20been%20going%20through%20them%20like%20crazy%20since%20making%20this%20discovery,%20buying%20them%20by%20the%20Prius%20load,%20and%20enjoying%20every%20last%20bite%20in%20as%20simple%20a%20fashion%20as%20possible.%3C/p%3E%3Cp%3EAsparagus%20is%20one%20of%20those%20vegetables%20that%20need%20little%20adornment%20since%20nature%20did%20such%20a%20bang%20up%20job%20in%20the%20soil.%20The%20nutty,%20herbaceous,%20and%20green%20flavors%20are%20so%20distinctive%20you%E2%80%99d%20have%20to%20forage%20for%20fiddlehead%20ferns%20to%20find%20its%20equal.%20My%20Asparagus%20&%20Cheddar%20Soup%20is%20a%20tasty%20way%20to%20enjoy%20this%20treat%20while%20keeping%20it%20relatively%20simple.%20All%20you%20need%20is%20a%20little%20time%20to%20properly%20sweat%20the%20onions%20and%20asparagus,%20and%20you%E2%80%99re%20practically%20home%20free.%20If%20you%20are%20as%20busy%20as%20I%20seem%20to%20be%20these%20days%20be%20sure%20to%20step%20away%20from%20your%20computer%20or%20phone%20while%20you%20enjoy%20this%20decadent%20soup.%3C/p%3E%3Cp%3ESweat%20the%20onions%20in%20the%20butter%20in%20a%20medium%20pot%20over%20medium-low%20heat%20with%20the%20lid%20on%20and%20a%20little%20salt%20until%20they%20are%20translucent.%20Add%20in%20the%20asparagus%20and%20continue%20to%20sweat%20until%20they%20are%20cooked%20throughout.%20Sprinkle%20in%20the%20flour,%20stirring%20to%20coat%20and%20allow%20it%20to%20cook%20for%20a%20little%20longer.%20Add%20the%20mixture%20to%20the%20pitcher%20of%20a%20blender%20with%201%20cup%20of%20the%20stock%20and%20puree%20until%20smooth.%3C/p%3E%3Cp%3EPour%20the%20mixture%20back%20in%20the%20pot%20and%20add%20in%20the%20remaining%20stock,%20salt%20and%20pepper.%20Bring%20the%20mixture%20to%20a%20boil%20and%20add%20in%20the%20cheese,%20stirring%20constantly.%20Serve%20immediately%20topped%20with%20croutons%20and%20a%20sprinkle%20of%20pepper.%3C/p%3E%3Cp%3EServes%204%20as%20a%20starter.%3C/p%3E%3Cp%3EErin%20Jimcosky%20is%20the%20Editor%20in%20Chief%20for%20CRAFT%20magazine,%20which%20debuts%20in%20June%20of%202014.%20In%20her%20spare%20time%20she%20is%20a%20freelance%20food%20and%20travel%20writer%20and%20pens%20the%20Hungry%20Mutineer%20column%20in%20Mutineer%20Magazine.%20When%20she%20isn%E2%80%99t%20in%20the%20glued%20to%20her%20computer,%20she%20can%20be%20found%20in%20the%20kitchen%20and%20working%20in%20her%20garden.%3C/p%3E%3Cp%3EFollow%20her%20on%20Twitter%20@hungrymutineer.%3C/p%3E%3Cp%3EPhil%20Jimcosky%20has%20done%20everything%20from%20food%20and%20product%20photography%20for%20Mutineer%20Magazine,%20Anchor%20Distilling,%20St.%20Suprey,%20and%20Greater%20Purpose%20Wine%20to%20location%20shoots%20in%20Spain,%20but%20his%20real%20love%20is%20in%20photojournalism.%20When%20he%20isn%E2%80%99t%20in%20his%20home%20studio%20he%20can%20be%20found%20chasing%20down%20the%20perfect%20image%20on%20the%20streets%20of%20Washington%20DC.%3C/p%3E%3Cp%3ECheck%20him%20out%20at:%20http://foodaperture.com/about/%3C/p%3E%3Cp%3EFollow%20him%20of%20Twitter%20@@foodaperture%3C/p%3E){kind=link}
